Linseed oil isn’t food safe. Plain old Walmart mineral oil is safe and can be reapplied as many times as you want for the life of the board.

I prefer Danish oil or even mineral oil but I'd use a cloth to apply

Linseed oil will go bad inside the wood and should never be used in a cutting board. Mineral oil and beeswax.
