@revilinglake: 🍳 Protein Egg Curry 🔽 Called "Khagina" in my hometown, it's another one of mum's recipes that was a staple school lunch! 🍡 Macros (per serving): 249 kcals | 18P, 10F, 23C 👇🏻 Makes 2 Ingredients 🧾 ▪️1 Tsp Cooking Oil (6g) ▪️3 Medium Onions (Abt 150g each) ▪️2-3 Finger Chillies ▪️1 Tsp Ginger-garlic paste (15g) ▪️3 Medium Egg Whites (90g) ▪️3 Medium Eggs ▪️ Handful Fresh Coriander Spice Blend 🧂 1 Tsp Salt & chili powder ½ Tsp Turmeric Prep 🧑🏻‍🍳 1️⃣ Heat oil in a pan on medium heat. Add thinly sliced onions, chopped green chillies & cover. 2️⃣ Once they start turning soft, add ginger garlic paste, spice blend, a handful of coriander, ½ cup water (120ml). Mix & simmer with the lid on for 5 minutes. 3️⃣ Make lil divots & gently place the eggs & whites in. Top with more coriander, cover & simmer for 5-8 minutes. (Till your required yolk consistency) *️⃣Keep the lid on most times to retain moisture & avoid a dry curry! Best enjoyed with a chapati or flatbread! FOLLOW for more macro-friendly Indian food!
