@comedinewithbrie_: Part 1 - Pasta Carbonara 🍝 This isn’t my usual balanced recipe, but carbonara is still nourishing in its own way- protein from eggs and guanciale, calcium from pecorino, and that cosy comfort we all need sometimes 😜✨ health is about balance 🙌🏽 Ingredients (Serves 2): -180g pasta -180g guanciale, diced -1 whole egg -2 egg yolks -60g pecorino, finely grated Recipe:
-Cook the pasta in salted water until al dente, reserving 100ml of the pasta water. -Meanwhile, whisk 1 whole egg, 2 egg yolks and 60g pecorino together in a bowl with lots of black pepper. -Place the chopped guanciale into a cold pan (no oil needed) and cook slowly over medium heat, allowing the fat to render and the meat to turn golden and crisp. Once cooked, remove the excess fat, all bar about 2 tbsp. -Add the cooked pasta to the pan, remove the pan from the heat, and toss it together with the guanciale. -Quickly stir in the egg mixture with a splash of pasta water and stir gently until creamy and glossy (add pasta water gradually as needed, not all at once). -Serve immediately with extra pecorino and add an extra egg yolk to stir in if you’re feeling extra 💁🏽‍♀️ #carbonara #comfortfood #EasyRecipe #asmrfood
