@prairie.creek.hom: Directions: 1. Clean and snap 14 to 15 pounds of beans. This will yield about 7 quarts. 2. Pack into hot jars, and fill with hot/simmering water to 1 inch headspace. Add 1 tsp salt (optional) debubble and wipe rims. 3. Add lids and bands to fingertip tightness - I use @forjarsusa ! Fill your prepared canner (canning rack and 3 inches hot water, follow your canners instructions. I have an @all_american_canning ) 4. Secure the lid and turn heat to high. Watch for your steady 10 minute steam, then add the weight at 10lbs pressure (my altitude is 0-1,000. Adjust as needed for your altitude). Pressure can for 25 minutes. 5. Turn off heat and let the gauge fall back down to 0. Once it reaches zero, remove your weight with an oven mitt so you don’t get burned. Let it sit for 2 minutes more, then remove the lid. Let jars sit for 5-10 minutes before removing to a toweled surface. 6. Let sit 12-24 hours, remove bands and check the seals.
