Basically the fall dessert of your dreams 🍂 Made dairy-free with Native Forest Organic Coconut Milk 🥥 by@gabydimova ✨Dough 2 2/3 cups all-purpose flour (320g) 2 tbsp granulated sugar 1/3 cup room temperature vegan butter (80g) 1/4 tsp salt ✨Yeast 1/2 cup Native Forest Organic Classic Coconut Milk (120ml) 1 tbsp granulated sugar 2 1/4 tsp instant yeast (one standard package) ✨Filling 1/2 cup room temperature vegan butter (112g) 1/2 cup brown sugar- I used dark brown sugar (100g) 2 tbsp ground cinnamon ✨Plus 1/2 cup Native Forest Organic Classic Coconut Milk to pour on top of the cake ✨Cream Cheese Frosting 2/3 cup vegan cream cheese 1/2 cup powdered sugar (50g) 1 tsp vanilla bean paste or vanilla extract ✨ Directions Warm coconut milk + 1 tbsp sugar in the microwave (1 min). Check temp—should be 105–110°F. Add yeast, cover, and let sit 5–10 min to activate. In a large bowl, mix flour, sugar, butter, salt + yeast mixture. Knead 5–10 min (stand mixer with dough hook works great). Cover and let dough rise in a warm spot for 45 min, until doubled. Whisk together filling. Roll out dough on a floured surface into a 15x12" rectangle. Spread filling on top. Cut into six strips (2.5" wide). Roll one strip into a spiral and place in center of an 8" springform pan. Wrap remaining strips around to form a giant roll. (Be gentle!) Cover and let rise another 45 min. Preheat oven to 350°F. Bake 30–35 min, until edges are golden. While baking, whisk frosting.
