Heat pot on medium high heat and add 1/4 of coconut milk can. Fry coconut milk until reduced and oil starts to separate. Add in green curry paste and fry until fragrant. 2. Reduce heat to medium heat and add remaining coconut milk and chicken to the pan. Stir chicken gently to combine chicken with coconut milk and curry paste. Add in water and allow curry to gently simmer until chicken is almost fully cooked. 3. Add in kaffir lime leaves and veggies of choice.
