This is my go to comfort dessert, simple with few staple ingredients to let the best of French ingredients shine through. All tools used as well as similar vintage bowls, plates, and my outfits are linked in my linktree! (If you have any questions about where anything is from in my videos, it's more than likely linked somewhere in my linktree Dough (my mold is 24cm/9inches) 130 grams of flour 65 grams of butter, cold and cut in small cubes  Pinch of salt  1 tbsp of sugar 50 grams of egg (about 1) Grease your mold. In a bowl, add all the ingredients except the egg, then rub together till sandy texture. Then add the egg and mix till comes together in a ball. Then use the palm of the hands to rub though dough once to fully incorporate ingredients. Roll between 2 sheets of parchment paper with flour. Place into mold, making sure to push the dough down the side of the mold, so it doesn't shrink when baking. Then prick with a fork.  Place in fridge or freezer for at least 30 minutes. Bake in a preheated oven at 180C till very lightly golden browned (feel free to use pie weights if you’d like when baking). Apple compote 2 apples - Granny Smith or golden delicious 1 Tbsp of butter 2 tbsp of sugar Just a splash of lemon juice Pinch of salt Optional - splash of rum, pinch of nutmeg &/or cinnamon, and a tsp or so of vanilla extract Dice the apples, then add to pan with rest of ingredients. Cook on medium heat for about 10 minutes, till apples are softened and reduced to a thick compote. Let cool then add to base of cooked tart. Assembly Peel and core 3-4 green apples, cut in half, then cut in 2mm slices. Add some apple offcuts to tart, then add sliced apples in one row, then add the offcuts to the middle to build up the next row (this keeps the apples from falling in the middle when baking as the apples reduce quite a lot when baking). Add the second row and then the top. Brush with melted butter and sprinkle with raw sugar. Then bake in a preheated oven at 180F for about 25-30 minutes (time depends on your oven) till golden browned and apples are soft. Once cooled slightly and de-molded, brush with warmed apricot jam to keep tart shiny.  Et voila, bon appetite! #paris #baking #kitchen #chef #Recipe
