Cheesy Chipotle Honey Baked Chicken  The kind of dinner that makes healthier eating feel easier to stick to 🤤 sticky chipotle honey glazed chicken topped with spicy cheese, with potatoes, fresh pico & chipotle yoghurt  Definitely one to add to next weeks dinner list 📌 Ingredients (serves 2):  Pico de gallo 5 cherry tomatoes quartered  ½ red onion, finely diced
1 tbsp fresh coriander, chopped
Juice of ½ lime

30g honey 1 tsp apple cider vinegar

 Chipotle yoghurt: 40g greek style yoghurt 
¼  tsp chipotle paste
1 tsp lime juice Pinch of salt  To finish 40g Mexicana cheese, grated
100g shredded lettuce 1/2 lime, cut into wedges 💞Mix together the pico de gallo. Set aside. 💞Rinse the cubed potatoes under cold water, then pat dry well using kitchen paper. Place into the air fryer drawer, spray with oil and season with the ingredients listed. Air fry at 190°C for 22-25 minutes, shaking halfway through, until golden and crispy. 💞Mix together the glaze ingredients.  Place the chicken breasts onto a baking tray and season with the smoked paprika, salt and black pepper. Brush over half of the glaze. Bake at 200°C fan for 15-17 minutes, brushing with the remaining glaze halfway through, until cooked through. In the last 2 minutes of cooking, top with the cheese to melt.  💞Mix together the chipotle yoghurt ingredients.  💞Serve the potatoes with the lettuce & chicken spooning over any remaining glaze from the tray.  Finish with the pico de gallo, chipotle yoghurt and lime wedges before serving.
