Every bite tastes like banana pudding heaven 💛 NILLA WAFER CRUST: 1 box Nilla Wafers 2 tbsp brown sugar 1/2 cup unsalted butter BANANA CHEESECAKE: 24 oz cream cheese (3 blocks, room temperature) 3/4 cup granulated sugar 1 tsp Pure vanilla extract 2 bananas (mashed 1/2 cup sour cream (room temperature) 1/4 cup heavy cream (room temperature) 4 large eggs (room temperature) 1 cup Crushed Nilla wafers 2 Bananas (thinly sliced) WHIPPED BANANA PUDDING: 1 package banana cream pudding mix (3.4 oz) 1 cup milk 1 tsp vanilla extract 1 cup heavy cream Crushed Nilla Wafers for decorating Nilla wafer crust: -Preheat oven to 325°F. Spray a 9-inch springform pan with nonstick spray, line the bottom with parchment paper, and spray again. -Add the Nilla Wafers to a food processor and blend into fine crumbs.  -Mix with the brown sugar and melted butter until combined.  -Press the mixture into the bottom and halfway up the sides of the pan, pack it tightly.  -Bake for 11 minutes. Banana Cheesecake: -In a large bowl, beat the cream cheese and sugar until smooth and creamy.  -Add the mashed bananas, vanilla extract, sour cream, and heavy cream, mix until combined. -Add the eggs and mix on low speed just until incorporated.  -Pour half of the cheesecake batter over the crust. Add a layer of sliced bananas and crushed Nilla Wafers, then pour the remaining batter on top. -Bake for 50–70 minutes, or until the edges are set and the center still has a slight jiggle.  -Turn off the oven, crack the oven door open, and let the cheesecake cool inside for 30 minutes.  -Remove from the oven and cool completely, then cover and refrigerate for at least 6 hours or overnight. Whipped banana pudding: -Whisk together the instant pudding mix and milk for 2 minutes. Refrigerate while you prepare the whipped cream. -In a separate bowl, whip the heavy cream and vanilla until stiff peaks form. -Gently fold the whipped cream into the pudding mixture until smooth and fluffy. -Remove the cheesecake from the pan and top with the banana pudding mixture.
