@davepizzaoven: Stracciatella makes everything better. This was a poolish recipe that I was playing with. I’ll make a tutorial soon but below are some percentages for one dough ball. 475g dough ball 200g flour (65/35 split BF/AP) 140g water (70%) 35g poolish (20%) .5g IDY (0.2%) 5.5g salt 5g sugar 5g olive oil #pizza
