In case people don't know, mold is not always bad. Yes, just setting some meat out untill random mold develops is bad, but in the same way letting fruit just sit till it spoils is very different from the fermentation for alcohol, there are cases where, when processing certain foods, introducing specific mold colonies can alter the texture and flavor of the resulting dish. The mold cultures used aren't done at random, they were added on purpose and are not harmful to you.

Natto is fermented, not moldy. It is also not tasteless, nor do most Japanese people eat it daily. It’s very healthy!
