Mahamri/Mandazi  Mahamri/ mandazi recipe  Ingredients * Coconut milk ( 1 cup 1/3 in total ) 1 cup of coconut milk and 1/2 cup of warm water and mix  * Salt ( 1 tsp )  * Sugar ( 2/3 cup of sugar )  * Flour 3 cups  * Warm water 1/2 cup warm water for the yeast  * Yeast ( 1 Tbsp )  * Cardamon spice ( a mixture of cardamon and cinnamon stick blended ) 1 Tsp Steps:  1. Pour your dry ingredients in a mixing bowl ( flour, salt, sugar, cardamom ) set aside  2. To a small bowl add in 1/2 warm water and your yeast mix and se aside to activate should take 2-5 mins  3. Add your yeast mixture to the flour bowl  4. Then add in your 1 cup coconut milk make sure to add 1/3 cup water to your coconut milk and mix  5. Add your coconut milk mixed with water to your flour bowl  6. Now you will mix and knead your dough for about 8-10 mins we want it to be soft but firm and not sticky  7. If it’s sticky add 1/4 cup of flour as you go until you get a nice solid soft ball  8. Once you knead your dough set aside and cover let it rise and double in size  9. When your dough doubles in size section into 4 pieces and roll those 4 pieces into a ball, then you will flatten out each ball and cut into 4 not thin or not too thick ( just the way you see it in the video )  10. Turn your stove on ( 8 ) (medium high ) and place your pan with frying oil on the stove let your oil get hot enough to start frying you can also test with a small piece of mandazi if it starts rising to the top and turning folds brown then your mandazi is ready if not give it time to get hot  11. Frying your mandazi on both sides until it’s golden brown!  12. You can enjoy it with coffee, chai, or tea or even beans etc.     #mahamri #mandazi #swahilifood
