Chocolate Cheesecake Smooth, creamy, and rich in real chocolate flavor ,perfect for true cocoa lovers! 🧾 Ingredients Crust: 	•	150–200 g chocolate cookies (like Oreo, without filling) 	•	70–80 g melted butter Filling: 	•	400 g cream cheese (room temperature) 	•	90 g heavy cream 	•	2 eggs + 1 yolk (room temperature) 	•	60 g honey 	•	40–50 g granulated sugar (to taste) 	•	2 tsp vanilla extract 	•	1 tsp cornstarch 	•	120–150 g semi-sweet chocolate (min. 55%), melted and slightly cooled 	•	15–20 g unsweetened cocoa powder, sifted (optional) Berry Jam: 	•	150 g frozen berries 	•	2½ tbsp sugar 	•	Juice of ½ lemon 	•	1 tsp cornstarch, dissolved in a little water → Simmer everything in a small pot until thick and jammy. Let cool completely. Ganache: 	•	100 g dark or semi-sweet chocolate 	•	80 g heavy cream → Heat the cream, pour over the chocolate, wait 1 minute, then stir until smooth. ⸻ Instructions 1. Prepare the crust Crush the cookies until finely ground. Mix with melted butter and press into the bottom of an 8-inch (20 cm) springform pan. Bake at 170 °C (340 °F) for 8 minutes — or chill for 30 minutes. 2. Make the filling a) Beat cream cheese, honey, and sugar until smooth. b) Add eggs one at a time, then the yolk and vanilla. Mix until just combined. c) Add heavy cream and mix. d) Add cocoa powder (if using). e) Pour in the melted chocolate and mix until smooth. f) Dissolve cornstarch in 1 tbsp of the mixture, then stir it back in. 3. Assemble & Bake Pour half of the filling over the crust. Spread the cooled berry jam on top. Cover with the remaining filling. Bake in a water bath at 150 °C (300 °F) for 50–60 minutes, until the center is slightly jiggly. 4. Cool, Chill & Decorate Turn off the oven, leave the cheesecake inside with the door slightly open for 1 hour. Refrigerate for at least 6 hours or overnight.
