Flippin caught a bit of a cold, but hope you enjoy the recipe. Ingredients: - 1 tsp Panch Puran (5 spice) - 3 Bay Leaves - 3 Cardamom Pods - 1 Cinnamon Stick - 6 tbsp Vegetable Oil - 1 Large Onion - 1kg Mutton (shoulder and leg mix, chunks) - Large pinch of Salt - 2 Garlic and Ginger Blocks - 3 Large Tomatoes - 1 tsp Turmeric - 1 tsp Cumin Powder - 1.5 tsp Coriander Powder - 1 heaped tsp Curry Powder - 0.5-1 tsp Chilli Powder - 3-4 Green Chillies - 4 Medium White Potatoes - 3/4 tsp Garam Masala - Pinch of Kasuri Methi - Handful of Fresh Coriander Method: 1. Heat the oil in a pan then add the whole spices and stir for 30 seconds. Slice and add the onion with a touch of salt and cook for 2 minutes. Put the lid on and cook on low heat for 10 minutes. 2. Add the meat and salt, then cook for 5 minutes until the meat changes colour. Add in the garlic and ginger block and stir until it melts. Chop the tomatoes and add to the pan. Put the lid on and cook on medium heat for 15-20 minutes. 3. Remove the lid, then break down the tomatoes (remove the tomato skins if you wish). Then put the lid in and simmer on low heat for an hour. 4. Once done, remove the lid and add in the spices and stir. Cook for a few minutes until the oil separates. Add in 800-850ml of water, bring to to boil, then put the lid on and simmer on low heat for 50-60 minutes. 5. Peel and cut the potato into large chunks. After simmering, add the garam masala, potatoes and another touch of salt. Stir then continue simmering on low heat with lid on for 12-14 minutes.  6. Finally, remove the lid and add in Kasuri methi and fresh coriander and stir. Increase the heat and reduce the sauce for a few minutes to achieve your desired consistency. #indianfood #meatcurry #indiancurry #lambcurry
