Preheat oven to 350F 2. Chop the bacon into small pieces. 3. Slice the smoked sausage into coins. 4. Dice the Yukon Gold potatoes into bite-sized cubes. 5. Chop the red and green bell peppers. 6. Beat the eggs in a bowl and set aside. Cook the Meat & Potatoes: 7. In a large skillet, cook the bacon and smoked sausage over medium heat until browned and crispy. 8. Remove from the skillet and set aside. 9. In the same skillet, add the diced potatoes. Pour in ¼ cup of water to help steam the potatoes and prevent sticking. 10. Add the salt, paprika, garlic powder, onion powder, and black pepper. Stir in the chopped red and green bell peppers. 11. Cover and cook for 12 minutes, stirring occasionally to ensure the potatoes cook evenly. Once the potatoes are fork-tender, push them to one side of the pan. Cook the Eggs: 12. Add 1 tablespoon of butter to the cleared side of the skillet. Once melted, pour in the beaten eggs. 13. Stir gently, slowly incorporating the eggs with the potatoes. Cook for about 2 minutes, or until the eggs are fully set and cooked through. Turn off the heat. 14. Turn off the heat and add the cooked bacon and sausage back into the pan. Mix everything together until well combined. Assemble the Casserole: 15. Layer the egg mixture in a 3-quart casserole dish, then sprinkle with half of the shredded cheddar cheese. 16. Add a second layer of the egg mixture and top with the remaining cheddar cheese. Garnish with sliced green onions. Bake: 17. Place the casserole in the preheated oven and bake for 5-7 minutes, or until the cheese is melted and bubbly. 18. Remove from the oven and garnish with sliced green onions. Serve: 19. Serve and enjoy
