The plural form keeps some of the pronunciation of when the word originated in old/middle english as wifman (wife person). We eventually stopped pronouncing the f in the middle so it became closer to “wimmen.” Not sure why, but as the word developed we continued to use the original vowel sounds for the plural, but kept updating the rules on how to pronounce singular
