@pov_husband: This actually worked great. Not my original idea, I saw this being done before. There's a restaurant in Santa Ana, CA making BBQ like this @JAR:BECUE so decided to improvise and make my own. The only things I'll change for next time is probably cut a second air hole for more air feed and place the thermometer hole lower so it doesn't get covered by the lid. The temp was held steady at 200-240F and I added a little charcoal every hour or so.
