@igfamousbydana: Chocolate Chip Banana Bread •1 bread pan, buttered and floured, 3 bowls (may include a stand mixer bowl), a whisk, a spatula, •1 stick of butter softened (I use salted and just a pinch of salt later, or unsalted if you want an exact salt measurement later) •2/3 cup granulated sugar (must use the basic white sugar for best taste and texture. This is not the time to go organic brown crystals) •2 large eggs, room temp •3-4 very ripe bananas lightly mashed- so ripe I’m talking they are falling apart when peeling •1/2 tsp of pure vanilla extract (not the time for imitation) •1 1/2 cups of all purpose flour (again white, all purpose. Another grain flour will mess up the texture. Cake flour will be too spongy, etc) Make sure its 1.5 cups leveled (take a knife and scrape excess off the top so the flour is flush with the rim) •1 tsp baking soda (make sure it’s been open for less than 6 months or it won’t rise) •1 pinch of salt if you used salted butter, 1 tsp salt if you used unsalted (bonus: kosher salt to sprinkle on top before baking for a slightly salted banana chocolate experience) •1 cup of semi sweet choc chips or chunks (can also include chopped roasted walnuts, but idc for them) can omit for regular Banana Bread, same recipe!) 1. Preheat oven to 350° (325° for convection ovens) and butter/flour the pan 2. In a bowl, whisk flour, baking soda and salt - you want the baking soda and salt more evenly incorporated with the flour 3. In a separate bowl, lightly whisk eggs and vanilla extract in a bowl, not enough to be solid yellow, but yolks should be broken 4. In a 3rd bowl with a hand mixer (or using a stand mixer) cream sugar and butter. (So egg mixture and flour mixtures are still separated in bowls 1 and 2) 5. Add mashed bananas and mix until incorporated 6. Add egg mixture and mix until even 7. Now set the mixer aside, you’re going to FOLD the flour mixture into the wet ingredients. DO NOT USE A MIXER, it’ll develop the gluten too much and give a tougher and drier bread. Folding means you take a spatula and mix by scooping from the bottom, up the side and over until all the flour is incorporated. 8. Fold in chocolate/nuts, or don’t for regular banana bread 9. Pour into pan and put in the oven (bonus: sprinkle kosher salt on top for a salted version) 10. Bake time is about an hour. I take it out at 50-55 minutes and check with a tooth pick or sharp knife. Contrary to popular belief, you don’t want it to come out totally clean because it will continue to cook as it’s cooling, which will make it dry. There should be just a little batter that’s gel like on the tooth pick when it’s time to take it out. 11. Let it cool about 10 minutes
