Maple Bacon Donut Focaccia🍁🥓 Measurements: For the dough 1 batch Same-Day Focaccia Dough (pinned at top of my page here) but add 30ml (2 Tablespoons) maple syrup instead of honey in the dough 22g (1½ tablespoons) salted butter for the worktop when diving the dough into pieces 15g (1 Tablespoon) salted butter to line the tray 22g (1 ½ tablespoons) salted butter to dimple the dough 300g (10.5 oz) smoked bacon or pancetta, cut into cubes or bite sized pieces (this is for folding into dough, dimpling on top and adding on top of icing). Fold some finely diced bacon into your dough during stretch and folds, and finish proofing in bowl.  On a buttered worktop, cut the dough into 12 individual pieces and coat each of them with a mixture of bacon fat/maple syrup, line the tray with butter and place the dough pieces into the tray (in a 3x4 formation), proof again and then dimple with more butter and bacon. Bake according to dough recipe instructions.  When it’s out of the oven slather it with brown butter maple glaze and top with crispy bacon bits.  There are no words for how divine this flavour is. I mean, I don't even know if we can call it focaccia any more, but does that matter?....NO, not when it's this good! If you love to dip your bacon into maple syrup, this one is for you. If you love sweet and salt...this is for you.
