I’m surprised you didn’t include any excursions. FOR THOSE THAT REALLY WANT TO HAVE FUN: 1. Early morning at TeamLabs Biovortex. 2. Kyoto Samurai Experience / Waraku 和楽 3. Hozugawa River Boat Ride (Hozugawa Kudari) 保津川下り. All of these have to be reserved and they can all be done in 1 day.

if you don't enjoy enormous crowds then don't do the bamboo forest. it's honestly not worth it imo. but you should go to Wife & Husband for the cutest, coziest breakfast of your life.
