@jujumaoo: 🇮🇹 Minestrone | Soups So Good It Can Cure Any Sickness Ep. 16 INGREDIENTS: Minestrone: - 8-10 strips of bacon, sliced into thin strips - Oil for frying - 1 whole onion, chopped - 10-12 cloves, chopped - 1 carrot, chopped - 1/2 cup celery, chopped - 2 tbsp of Italian seasoning - 2 cans of canned tomatoes - Chicken stock as needed - 1 zucchini, chopped - 1 bunch of green beans, chopped - 1 potato, chopped - 2 cans of white beans - 1 pack of small pasta of choice - 1 bunch of spinach, chopped - Salt and pepper *All measurements are estimates. Cook and season with your ❤️ INSTRUCTIONS: - Start by rendering bacon in a hot pan until crispy. Remove from the pan and set aside for later while making sure to retain the fond and grease. - In the same pan saute your onions and garlic. Once softened and fragrant, add in your carrots and celery and stir. Season this mixture with Italian seasoning and add canned tomatoes and chicken broth until the pot is filled. Allow this to simmer for 10 minutes. - Add in the rest of your vegetables (zucchini, potatoes, and green beans) along with your cans of white beans and small pasta of choice.
