do a temperature check. I make sure mine hits 200°F in the middle before pulling it out of the oven.

Gumminess means it needs 5 more mins of baking! Use an internal thermometer needs to be at least 200 degrees

you just needed to temp it before you take it out make sure it reaches atleast 200 degrees in the middle and don't cut the bread for a minimum of 2 to 3 hours before cutting. remember it still cooks for a couple hours after you pull it out of the oven. great job tho.
