Pumpkin Pecan Bread Pudding Ingredients * 1 loaf brioche or challah bread, cut into cubes * 1 cup pumpkin purée * 4 large eggs * 2 cups whole milk * 1 cup heavy cream * ¾ cup brown sugar * 2 teaspoons vanilla * 2 teaspoons pumpkin pie spice * 1 teaspoon cinnamon * ¼ teaspoon salt * ½ cup chopped pecans * 3 tablespoons melted butter Pecan Topping * ½ cup chopped pecans * ⅓ cup brown sugar * 3 tablespoons melted butter * 2 tablespoons flour * ½ teaspoon cinnamon Directions 1. Heat oven to 350°F and grease a 9×13-inch baking dish. 2. Place the bread cubes in the dish. 3. Whisk together the pumpkin, eggs, milk, cream, brown sugar, vanilla, pumpkin pie spice, cinnamon, salt, and melted butter. 4. Pour over the bread and gently press the cubes into the custard. Let sit for 20–30 minutes. 5. Sprinkle ½ cup chopped pecans over the bread. 6. Mix the topping ingredients and scatter evenly over the top. 7. Bake for 45–55 minutes, until golden and just set in the center. 8.
