Hello Auntie, Mexican Here! You are basically on point with all of them. The green one is Prickly pear Fruit... Aka Fruta de Tuna. The white one with seeds is chilacayote. Which is a figleaf gourd... a sweet Mexican squash. All of them are Mexican fruits that have been crystalized using Mexican Lime powder and brown sugar and other stuff. But vendors here locally verify the actual sweetness or deliciousness of the crystalized fruit by letting bee's or wasps wander or steal pieces of fruit hahahaha it's a cultural thing you know it's good if bee's approve hahahahahaha
