@bankobake: FULL RECIPE 🥨 Dough * ½ cup warm whole milk (125mL) * ½ cup warm water (117mL) * 1 tsp granulated sugar (4g) * 2 ¼ tsp rapid/instant yeast (7g) * 3 cups bread flour (426g) * ⅓ cup dark brown sugar lightly packed (61g) * ½ tsp fine salt (3g) * ½ tsp baking powder (2g) * 2 tbsp unsalted partially melted butter (29g) Water Bath * 2 cups warm water (473mL) * 2 tbsp baking soda (35g) Almond Crunch * 6 oz sliced almonds (chopped) (170g) * ½ cup granulated sugar (107g) - Warm milk & water for ~45 secs in microwave. Add the sugar & yeast to the milk/water. Give it a mix & set aside until the yeast blooms - In a large mixing bowl, whisk together all other dough ingredients until combined. Add the bloomed yeast to the dry ingredients & mix with a wooden spoon until a dough ball begins to form - Sprinkle bread flour on a clean counter & then place the dough ball on top of the counter - Knead the dough by hand for ~3 mins until it's slightly sticky & soft. Form the dough into a tight ball & place in a well-oiled bowl - Cover the bowl with plastic wrap & a warm kitchen towel. Allow the dough to rise for 45 mins – 1 hr until it has doubled in size. During the rise, I like to make my caramel sauce which is on my page & the blog. You can also make the cream cheese frosting dip from my original pretzel recipe on my page - Chop the almonds & combine with the granulated sugar. After the rise, place dough on lightly floured counter & roll the dough out - Cut dough into 6 equal strips & roll each strip out to ~22″ long. Cut ~1" pieces from dough strips - In large bowl, combine the water & baking soda - Line baking sheet with parchment & heat oven to 400℉ - Dunk all dough pieces into the water & strain excess water - Toss each bite in the sugar/almonds. Lay bites on the baking sheet, not overlapping. Sprinkle extra granulated sugar on top - Bake on center rack for 8-9 mins until the tops are golden & bottoms are a deeper brown.
