I’ve been making apple butter for many many years. Don’t peel or core them or even do anything except quarter them. Put them in a crockpot and cover with cider or apple juice (I like the natural style juice). Cook in crockpot for 6-8 hours on low. Use a food mill to press the apples through and discard the peels that come off.
