The custom of throwing salt on the dohyo actually dates to the late 17th century! It was adopted from other Shinto purification rituals, partly as a way to give sumo more legitimacy (at the time sumo was facing repeated bans by the authorities)

It is to honor the god of the ring, and to purify it from the last defeat. Not just sumo, there are honoring and purifying traditions for every sport, including baseball, soccer, tennis, ... At the minimum, you bow to the field before entering and upon leaving.
