Because they were a “key” crop in the Keys over a hundred years ago. You know it’s proper when it’s got that light color. Never eat “key lime pie” that’s green. It’s supposed to resemble the color of cheesecake.

My MIL tried to tell me I bought terrible limes, so small and ugly. Then, showed me a pretty lime. They were Key Limes. I didn't correct her and that was 15yrs ago. I was trying not to outstep my bounds. I still think about that. Key Limes are small and gnarly looking but incredible.

It’s crazy simple to make. Key lime juice , egg yolks, and sweetened condensed milk…. Pour in a pie shell and cook at 325 for 15 min. So simple…
