MISO GLAZED SALMON bowls from your favorite duo — me x @Chef Bae 🙆‍♀️! I was in LA this past week so of course Brooke and I got busy in the kitchen—these bowls have Sweetgreen vibes but BETTER. The salmon is coated in a delicious miso glaze and broiled for a few minutes then we made a creamy cashew sauce to go on top. To save time you can use packaged precooked rice, which means that you can get this delicious, protein packed nourishing meal on the table in under 20 minutes flat—YEP. I’m pretty sure Brooke will be meal prepping this for her celebrity clients and now you can make them too.  Save this post, share with friends and be sure to follow us both for more! Makes 4 servings  Salmon 1 1/2 lbs salmon, skin removed, cut into bite size pieces  2 tb white miso (or chickpea miso paste) 2 tb coconut aminos (or tamari or low sodium soy sauce) 1 tb rice vinegar 1 tb maple syrup  1 tb toasted sesame oil Creamy Cashew Sauce 1/3 cup creamy cashew butter 1 tb rice vinegar  2 cloves garlic (or 1 tsp garlic powder) 1 tsp sriracha  1 tb maple syrup  [if your cashew butter is thick, you might need to add 2-3 tb water to thin the sauce] Bowls: 2 cups cooked rice (we like jasmine rice) 1 english cucumber, cubed 2 tsp furikake 1 tb rice vinegar Optional garnish: Pickled red onions (see @kalejunkie blog for recipe) Sesame seeds 1 avocado, sliced  Cut salmon into small bite size pieces and add to a bowl. In another bowl, whisk together the miso, coconut aminos, vinegar, maple syrup and sesame oil, until smooth and creamy. Pour the sauce over the salmon to coat. Transfer to a parchment lined baking sheet. Broil for 8 minutes (500F), then remove from oven and set aside. While the salmon is in the oven, make the creamy cashew sauce. Add all of the ingredients to a blender and blend until smooth. Taste and adjust as needed. Chop the cucumber into small pieces and toss with vinegar and furikake. Prepare rice. Once the rice is cooked, build your bowls, starting with the rice, then salmon, cucumber mixture, pickled onions (if using) and avocado.
