Plot twist. I proof in the pan that I bake in. Lined with parchment paper. Straight from fridge to oven no problems.

Idk about more sanitary if you wash flour sack/ towels they won’t get moldy don’t forget clean Benton/baskests the will get mold if not but definitely sounds easier
