love that you show how to cook it completely in a pan, simple. i follow you for recipe ideas, but I hate how so many chefs imply that it's 100% necesary to cook duck in an oven as well, which I feel makes people reticent on trying to cook it. kudos, very nice and easily explained.

Resturant called "the Brooklyn" in Seattle had Muscovy Duck breast with polenta, Swiss chard and stuffed figs. Ordered this for my birthday for several years even after it wasnt on the menu anymore😁 The closed unfortunately
