Cheesy Honey Chipotle Dump and Bake  A one dish dinner for nights when you’ve had a long day and just want something easy that still feels satisfying 🤌🏻  Minimal washing up, high protein and packed with veggies for volume. Save for later 💕 Ingredients (serves 4):  250g long grain rice, washed  1 ½ red pepper diced  2 medium courgettes (200g total) diced  500g chicken breast diced Salt  Pepper  1 ½  tsp smoked paprika

500ml hot chicken stock 
1 tbsp lightest cream cheese (optional) 
30g reduced fat cheddar grated  30g Red leicester cheese grated (can sub for mexican cheese or more cheddar)  A few sprigs of fresh coriander chopped for garnish

💕Start by preheating the oven to 200°C fan.
 💕Add the rice, red peppers and courgettes to a large baking dish (I use 41cm) and spread them out evenly.
 💕Whisk together the hot chicken stock, tomato purée, honey and chipotle paste until completely smooth. Pour this over the rice and vegetables and stir really well, making sure there’s no dry rice hiding underneath.
 💕Scatter the diced chicken evenly over the top of the dish. Sprinkle over the smoked paprika, garlic granules, onion granules, salt and plenty of black pepper, then lightly mix just the top layer so the chicken is seasoned without disturbing the rice too much.
 💕Cover the dish tightly with foil and bake for 35 minutes, until the rice is cooked and most of the liquid has been absorbed.
 💕Remove from the oven, take off the foil, then stir through the cream cheese (if using) while everything is hot.
 💕Scatter over the grated cheeses and return the dish to the oven uncovered for 10-12 minutes, until bubbling and lightly golden.
