Markus’ lang gehegter Traum wird endlich Wirklichkeit: japanische Sommernudeln, neu interpretiert à la Marküs. Leicht und kalt serviert, “al dente” aus Gelatine, mariniert in Sancho-Pfeffer-Öl, ein frischer Geschmacksträger für alles, was kommt. Oben drauf: Meerrettich, speckiger Senf und etwas Junglauch. 

Am Tisch wird alles mit einer aromatischen Speck-Dashi-Marinade aus Kombu, Speck und weißer Sojasauce übergossen.
Ein Spiel aus Frische, Leichtigkeit und Kühle.

Eine verspielte Brücke zwischen Japans Sommertradition und Bayerns Sulz-Liebe.

Markus’ long-time fascination finally comes to life: Japanese summer noodles, reimagined à la Markus. Light and served cold, “al dente” gelatin noodles marinated in Sancho pepper oil a fresh flavor carrier for everything that follows. Topped with horseradish, smoky mustard, and a touch of spring onion.

At the table, everything is poured over with an aromatic speck-dashi marinade made from kombu, speck, and white soy sauce.
A play of freshness, lightness, and coolness.
