The gesture you used in the beginning is like a “negation” gesture so you’d use it when you say まだまだです because the person I’m assuming is saying something like “Wow you’re Japanese is so good” & if you wanna be humble you can deny it with that gesture. Same reason why you’d sometimes use that gesture with saying 違うor like いやいや
