Set to 350°F (180°C). Line a baking sheet with parchment paper. 2. In a large bowl, beat butter, brown sugar, and white sugar until creamy (about 2–3 minutes). Gradually add to the wet ingredients until a smooth dough forms. 4. Fold in the dark and milk chocolate chunks. 5. Scoop about 2 tablespoons of dough and flatten slightly. Place half a marshmallow in the center and wrap the dough around it to seal completely. Arrange on the baking sheet, leaving some space between cookies. 6. Bake for 10–12 minutes, until the edges are set but the centers are still soft. (Do not overbake — you want the marshmallow inside to stay gooey!) 7.  Let cookies cool on the tray for 5 minutes, then transfer to a wire rack. Drizzle with melted chocolate or sprinkle with mini marshmallows if desired.
