It's just me and my husband so I make these and freeze the rolls individually and bag them. I freeze the enchilada sauce into 1/2 cup blocks. I put 3 rolls and a block in a freezer bag. When I'm ready to cook I thaw the sauce directly in my tiny casserole dish in the microwave. Roll the frozen rolls in the thawed sauce then oven bake till it's hot all the way through. I always have cheese so it's a fast, easy dinner.

I make smothered burritos all the time. I do black beans and enchilada sauce in a bowl with rotisserie chicken. I add black olives on top of the cheese too. Soo good. I’ll have to try with beef
