115g vegan butter, softened 95g oil 200g light brown sugar 50ml plant milk 1tsp Vanilla 2 overripe bananas 1tsp cinnamon 1/2tsp bicarb soda 1/2tsp baking powder 1/2tsp salt 175g plain flour 150g white bread flour 200g chocolate chips Extra bananas to top and flakey salt - Preheat the oven to 180c fan, line two baking trays with parchment paper - Cream the butter and sugar together in a bowl, then add in the oil, vanilla and milk until combined - Add in the ripe bananas and mash well, mix through - Add in the dry ingredients and mix to a smooth cookie dough. Fold through the chocolate chips and walnut pieces. Chill in the fridge for at least 30mins - Scoop balls of cookie dough, add a slice of banana and flakey salt on top - Bake for 10-13mins until the edges are lightly golden. They are so good warm!
