Instead of brewing from ground beans, many companies use chemically processed coffee extract made from concentrated instant coffee. The natural oils, antioxidants, and beneficial compounds are stripped away, leaving behind flavor and caffeine — but none of the good stuff. To cover the bitterness, they add sugar, artificial creamers, and “natural flavors” that make it taste like coffee, but it’s really just a lab-made version of it.
