It came out like paste on the 2nd grind. You had a lot of grizzle behind the blade on the 1st grind. That grizzle makes the corkscrew and blade push against the plate and mushes the meat. Try cleaning out all the grizzle behind the blade then do your second grind. Should come out better. Or it’s a low quality blade. I used to be a meat manager in a supermarket.

if you really want to double grind just use the large plate, otherwise you end up with meat paste. for Wild game always use the large plate because the sinew will pass through it much easier.

Yeah you didn’t get the grind plate seated w/ the key way aligned … the blade needs to be against the grind plate to get the best performance

That tri-tip looked a little bit lean. I would always have some fat that you’ve ran through the grinder that you can add to supplement and the comments about putting in it in the freezer before you grind it or when you grind it the second time our spot on Wanna it grinds better too. It doesn’t heat up.

When you put the die plates on you should line up the notch in it with the top of the neck it will help prevent wear on the screw and blades!
