@balancewithani: Chickpea, Feta & Veggie Pasta Salad Meal Prep Ingredients (serves 2–3): -150–200g pasta of choice -1 cup chickpeas, drained and rinsed -½ cup feta, crumbled -½ cucumber, diced -1–2 spring onions, thinly sliced -2 cups rocket -1 head of asparagus spears, blanched and chopped -2–3 tbsp parsley, chopped -optional: 1/2 cup shredded chicken Dressing: -2 tbsp olive oil -2 tbsp balsamic vinegar -1 tsp Dijon mustard -½ tsp honey or maple syrup -Salt & pepper, to taste Instructions: 1.Cook pasta according to package instructions, drain, and let it cool slightly. 2.If using asparagus, blanch for 2–3 minutes in boiling water, then cool in ice water to keep bright green. 3.In a large bowl, combine pasta, chickpeas, cucumber, spring onion, asparagus, rocket, parsley, and feta. 4.Whisk together dressing ingredients and pour over salad.
