This is my favorite pan from @Made In Cookware — it’s a 12-inch, 5-ply stainless steel pan, which means it heats evenly and holds that heat for a perfect sear. If you want to check out the best pans in the game, click the link in my bio.
HOW TO SEAR:
1. Preheat your pan over medium to medium-high heat for 2–3 minutes.
TIP: A splash of water in the pan will bead and dance around the surface if it’s ready. If the water instantly sizzles and evaporates, it’s not hot enough yet.
2. Completely dry your food with a paper towel to remove all surface moisture immediately before adding it to the pan.
TIP: For meat, let it sit on a wire rack uncovered in the fridge overnight to air dry.
3. Add a small amount of neutral oil and let it shimmer for a few seconds before adding your food.
4. Once the food is down, don’t touch it — it’ll naturally release from the pan with a gentle nudge once the sear is complete.
TIP: Don’t increase the heat much past medium to avoid burning during the sear.
Thank you! Because I got their carbon steel and I hate it. Lol. Nothing wrong with it, but I haven’t learned how to season it right. I’d rather stick to stainless steel but couldn’t get a good sear.
