Big shoutout to @dangeats_ for recommending @ragazziwineandpasta a few years ago - they seriously know their stuff Started off with the anchovy sourdough, which was light, fresh, and perfectly balanced - salty, buttery, and just chef’s kiss. The tuna crudo with apple wasabi and furikake was just as amazing as I remembered - fresh, zesty, and full of flavour. The prawn mafaldine with tomato and kombu was such a standout - rich, complex, and full of umami goodness. And that spanner crab pasta with fermented chilli butter… oh my god. That sauce was so addictive I could’ve drunk it straight from the bowl. Every pasta dish here uses a different type of pasta, so you get to experience all these amazing textures and flavours you probably haven’t tried before.
