Replying to @Kelly Ratatouille for Mom’s birthday Growing up my mom would make us anything we want for our birthdays so today I return the favor and try my hand at Ratatouille (Confit Byaldi). Recipe is super simple, and execution just demands being decent at patterns/stacking.  Sautee roasted red peppers, onion, carrot in olive oil with chopped thyme, rosemary, basil until softened. Add garlic, crushed red pepper, dried oregano (shout out @Christian Petroni for the whole dang tree recommend), garlic salt, pepper. When soft and fragrant, add can of tomatoes and let burble - then blend with a splash of water. Coat bottom of circular dish with sauce, stack in spiral from the outside some thin cut eggplant, zucchini (green and yellow I forgot yellow), and tomato. When shopping for these try to make sure they have a close circumference it’ll make this job much easier. Bake covered with parchment at 375 for 30 minutes or until veg is softened. Put ring mold in center of plate, take a stack of veg and put it in sideways filling the mold. Then top with another stack of veg circle side up, garnish with one single chive, do a circle of sauce around the outside for Remy’s plating style.  This was my first time making this and flavor was perfect, but i wish I cut veg slightly thinner and used japanese eggplant to make the size more similar. All in all though this is a fantastic and inexpensive dish for veg and meateaters alike.
