Crispy Fried Chicken RECIPE-COOKING WITH BRIGHT EYES Ingredients For the chicken • 1 kg chicken wings/drumettes • 1 cup (240 ml) buttermilk or evaporated milk • 2 eggs • 1 tablespoon (15 ml) lemon juice • 1 teaspoon (5 g) salt For the seasoned flour • 4 cups flour (500 g) • ½ cup cornflour/cornstarch (60 g) • 2 teaspoons (10 g) paprika • 2 teaspoons (10 g) garlic powder • 2 teaspoons (10 g) onion powder • 1 teaspoon (5 g) black pepper • 1 teaspoon (5 g) white pepper • 1 teaspoon (5 g) dried thyme • 1 teaspoon (5 g) dried oregano • 1 teaspoon (5 g) ginger powder • 1 teaspoon (5 g) salt • ½ teaspoon (2–3 g) cayenne pepper, optional • 1 teaspoon (5 g) baking powder For frying • Vegetable oil, enough for deep frying Method Wash and pat the chicken dry. Place in a large bowl. Add buttermilk, eggs, lemon juice and salt. Mix thoroughly so every piece is coated. Cover and marinate in the refrigerator for at least 2 hours, preferably overnight. In a large bowl, combine the flour, cornflour, paprika, garlic powder, onion powder, black pepper, white pepper, thyme, oregano, ginger, salt, cayenne pepper and baking powder. Take each piece of chicken from the marinade and place it into the seasoned flour. Press the flour firmly onto the chicken to create a thick, craggy coating. For an extra-crispy crust, dip the floured chicken briefly back into the marinade and coat it in the seasoned flour again, pressing and squeezing the flour onto the chicken. Allow the coated chicken to rest for about 10 minutes before frying. Heat vegetable oil to about 170–175°C (340–350°F). Carefully add the chicken in batches without overcrowding the pan. Fry until deeply golden, crispy and fully cooked through, turning occasionally. Depending on the size of the pieces, this can take about 8–15 minutes. Remove and place on a wire rack or paper towels to drain excess oil. Serve hot with fries, coleslaw, ketchup or your favorite dipping sauce. Secret for that extra-crispy coating: The combination of flour + cornflour + double dredging + baking powder gives you those crunchy, flaky layers.
