Vietnam is a very safe place and your risk of getting food poisoning is bigger in the US than Vietnam.

I also get the worst food poisoning in upscale restaurants. My guess is that chain restaurants have to use frozen ingredients, which can be partially defrosted and then undercooked when having too many orders, especially with the chicken (no cuisine I've ever know that serves raw chicken). In the opposite, most Vietnamese dishes are well done, killing the bacteria in the process I guess😅. Another reason is that you two travel alot, so your guts are trained with various strain of gut bacteria already.

totally agree,we always at local - freshest food. You're more likely to get sick in a restaurant or Western place because refrigeration is not used well....

There’s plenty of food poisoning in the USA, in fact there’s a massive recall on eggs right now.

Sir :
Only time I got sick was from drinking the water from the melted ice or eating the greens from the basket that comes with the food. Even when I had to stay in the village, never got sick.

Food is so so fresh in Vietnam. I’m always a veggie when I visit Asia. After you visit a food market you’ll know why.

My rule is: if the dish only has to be assembled eat it in the morning when it’s fresh otherwise you don’t know how long the ingredients have been sitting in the heat (banh mi, xoi, grilled meat that you don’t see coming off the grill). Dishes that come off the stove/grill/pan etc. are presumably fresh so safe to eat whenever (noodle soups, banh cuon, meat you can see off the grill)

waters/ice are the main problem. don't add ice into your drinks, only use ice to chill bottles/ cans drinks
