@eatwithseth: I made it to the impossible one, Asador Etxebarri. And, yes, it’s as special as people say. Honestly, it’s even more special than advertised — and the accolades already include One @The MICHELIN Guide Star (should be two) and a No. 2 Ranking on The World’s 50 Best Restaurants list. You can’t quantify greatness. Bittor Arguinzoniz is a genuine master chef, and everyone you talk to in the Basque region says his food is THE most perfect version of this food-loving region’s cuisine. Ingredients are the star. There’s no wild, strange creations here. It’s local ingredients and dishes cooked in the most perfect way known to mankind in the most seasonal way. In other words, everything from the Txuleta to the seafood to the veggies to the dessert is the most perfect version of itself — executed by a true master chef with decades at the grill. Asador Etxebarri is a perfect restaurant that delivers perfect food and an incomparable setting: Bucolic and rural, at the foot of the Basque Mountains in the teeny, tiny town of Axpe — I counted maybe 5 or 6 buildings in the town square as I spun around admiring the mountains in awe. Finally, I’d be remiss if I didn’t speak about how wonderful the service is. Everyone is kind, attentive and just lovely, while the experience is not rushed. They let you move at your own pace and allow you to experience every ounce of the greatness without making you feel like you have to move along for the next people. It helps that there’s only one seating for day: 1:30 p.m. I was there for about 4 1/2 hours, but I’ve definitely heard of people spending more than 6 there. #españa #spanishfood #basquefood #txuleta #traveltiktok
