@fannychupp: 🇺🇸🇬🇧 CLOTTED CREAM (OVEN METHOD) Using Heavy Cream (US) or Double Cream (UK) You’ll need: 🥛 2 cups / 480ml heavy cream (not ultra-pasteurised) OR 480ml double cream 🍶 Small glass or ceramic baking dish (2–3cm / 1in deep) Method: 1️⃣ Preheat oven to 180°F / 82°C (lowest setting). 2️⃣ Pour cream into the dish, about 1 inch / 2.5cm deep. 3️⃣ Bake for 12 hours (overnight works perfectly).  A golden, wrinkled skin will form, that’s what you want! 4️⃣ Cool to room temp, then cover & chill for 8 hours. Perfect with warm scones & jam and makes the BEST roast potatoes 🥔 💡 Tip: In the U.S., use pasteurised heavy cream only (Kalona Supernatural or Organic Valley regular). for those in areas of the US where you can only find ultra pasteurized heavy cream it will usually still work. There will just be a layer of milky liquid underneath. I just lift a corner and drain it out. you can toss or use for cooking. I've used Walmart's great value heavy cream for over a decade and it works every time

What percentage of fat did the starting cream have (before baking)? Here (Canada) we have 35% and once baked there’s a liquid whey that needs to be removed below the “clotted cream”. So your starting cream fat % much be higher to not have the whey…??? 🤔
