@norbertobriceno: Kinda Interesting Things #215: The Black and White Cookie Just north of 87th Street on 1st Avenue, you’ll come across this storefront for a thrift shop. But if you look to the right of it, you’ll notice that last remnant of Glaser’s Bake Shop, the legendary baker that created one greatest New York City treats you’ve ever had the pleasure of feasting your eyes on. This is the history of the Black and White Cookie. Technically, Black and White isn’t really a cookie. It’s a small drop cake. The batter is like cupcake batter, but with a bit more flour so it keeps its shape when dropped onto the baking sheet. According to Herb Glaser, of the legendary Glaser Bake Shop, “The trick is adding just enough flour so it holds, but not so much that it dries out.” Once baked, it’s topped with chocolate and vanilla fondant icing. The black-and-white cookie’s origins are a matter of debate. Despite its complicated origins story, what emerged was the city’s most elegant pastry hybrid: part cake, part cookie, pure joy. Married on The Hudson River 1971 Katz’s Deli catered Glaser’s created a Black & White cookie pyramid as our wedding cake. Best night ever. Best food ever.

It seems like a lot of history has been lost very quickly in 2018, is there a specific reason? Obviously a lot of businesses couldnt survive covid, but I’ve noticed lots of businesses and historic buildings were lost specifically in 2018

It was Created in Brooklyn the reason it was blk & wht was during the depression not everyone can afford 2 so they were able to share to the one that didn't like chocolate
