@agoodstir: I Almost Didn’t Post This Because It’s So Easy… But It’s TOO GOOD! Sauteed Spinach with Garlic Ingredients: 2 tbsp olive oil 4 garlic cloves; slivered 10 ounces fresh baby spinach ¼ tsp crushed red pepper flakes (optional for a little heat) Salt & pepper to taste Directions: 1. Heat oil in a large skillet over medium heat. 2. Add garlic and saute about 30 seconds, just until fragrant; don’t let it brown. 3. Add spinach by the handful, tossing gently with tongs as it wilts. Continue adding until all the spinach is in the pan. 4. Season with salt, pepper, and red pepper flakes (is using) and toss. 5. Saute 1-2 more minutes, just until the spinach is tender and glossy.
