Ending my series strong with this Creamy Chicken & Potato Noodle Soup! 🫶 I saw @Alyssa Alonso add potatoes to her chicken noodle soup last year, and I’ve been making it this way ever since! Let me know if you give this one a try ❤️ *I used a rotisserie chicken from costco which gave me SO much chicken so I had to adapt and make a lot more soup than I intended* - 1 T butter - 1 T olive  - 1/2 large yellow onion, diced - 3 stalks celery, diced - 2-3 large carrot sticks, diced - 1 T Italian seasoning - 8 cloves garlic, minced - 1/2 cup dry white wine - 10 cups chicken broth (I had to use a lot of broth because I used a Costco rotisserie, if you’re using a regular store bought rotisserie you’ll probably only need about 6-8 cups). Make sure you buy extra broth for leftovers regardless! - 1 rotisserie chicken, shredded - 2-3 cups diced yukon potatoes, cut into small pieces - Salt and pepper, to taste  - 1/2 t paprika - Red pepper, to taste, optional - Parmesan rind, optional - 1/2 to 1 T bouillon, to taste - 4-5 cups medium egg noodles (use 2-3 cups if using a smaller chicken) - 1 cup heavy cream - 1/4 cup fresh parsley (or to taste) - 1 T fresh thyme (or to taste) - 2 T fresh dill (or to taste) - 1 T fresh rosemary (or to taste) - Garnish: fresh lemon and Parmesan 1. In a large dutch oven or soup pot, melt your butter and olive oil over medium heat. Add in your mirepoix, a pinch of salt and 1 T of Italian seasoning. Sauté for about 5 minutes or so. Throw in your garlic and cook until fragrant, about 30 seconds. Add in your wine, stir, and cook for another 2-3 minutes.  2. Pour in your chicken broth, seasonings, 1 T of bouillon, potatoes, shredded chicken, and parm rind. Stir, bring to a boil and cook until your potatoes are fork tender, about 15 minutes.  3. Once your potatoes are fork tender, remove the parmesan rind (if using) and add in your egg noodles. Cook for about 5-7 minutes, or until the noodles are tender. 4. Add in your cream and fresh herbs, stir and serve immediately. Top with fresh parmesan cheese and a squeeze of lemon.
